I’d never heard of the salsify plant until I posted some photos in my blog last year. I always just thought it was a weed growing in my garden. Come to find out, it has an edible root. I’ll have to pull one out of the ground and take a look.
There are salsify plants that have gone to seed.

Thank you, Viveka. I think one of the reasons I like the so much is that they are so delicate and soft looking.
I’m waiting for a few in my flower beds to open up. I really like their flowers, and love the big ball of seeds. They are the only weeds I don’t engage in open warfare.
I have a couple that haven’t opened up yet. I’ll try get the flowers when I can. The close so quickly.
That’s is why the master gardener said, don’t let it go to seed. They are just like dandelions. Beautiful photo.

I thought it was a dandelion at first. They don’t have edible roots, but you can make wine out of them. 🙂 The salsify looks more elegant or graceful. Beautiful.
